Sheet Pan Chicken Fajitas Recipe

1 pound thin-cut chicken breasts, cut into strips
2 bell peppers (any color), thinly sliced
1 large onion, thinly sliced
2 tablespoons olive oil
1 packet (about 1.25 ounces) fajita seasoning mix
Tortillas, for serving (flour or corn)
Optional toppings: sour cream, salsa, shredded cheese, guacamole, chopped cilantro, lime wedges, etc.
1. Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a large sheet pan with aluminum foil for easy cleanup.
2. Prepare the Chicken and Vegetables:
In a large mixing bowl, combine the chicken strips, bell pepper slices, and onion slices.
3. Season and Toss:
Drizzle the olive oil over the chicken and vegetables.
Sprinkle the fajita seasoning mix evenly over the contents of the bowl.
Toss everything together until the chicken and vegetables are well-coated with the seasoning mix and olive oil.
4. Arrange on the Sheet Pan:
Spread the seasoned chicken and vegetable mixture evenly on the prepared sheet pan.
5. Bake:
Place the sheet pan in the preheated oven and bake for about 25 minutes or until the chicken is cooked through and the vegetables are tender. You can check the chicken’s doneness by cutting a piece in half; it should no longer be pink in the center.
6. Warm Tortillas:
While the chicken and vegetables are baking, warm your tortillas in the oven or microwave according to the package instructions.
7. Serve:
Once the sheet pan chicken fajitas are done, remove them from the oven.
Serve the cooked chicken and vegetables in warm tortillas.
