  • 1 teaspoon garlic salt
  • 1 teaspoon Tony Chachere’s seasoning
  • 1 teaspoon pepper
  • 1 teaspoon lemon pepper
  • 1 lb fresh green beans, cleaned and trimmed
  • 4-5 carrots, cleaned and cut
  • 1 tablespoon olive oil (for veggies)
  • 1 lb smoked sausage, sliced
  • Gochujang (Korean hot sauce), to taste (optional)

  1. Prepare Potatoes:
    • In a bowl, combine diced potatoes with 1 tablespoon of olive oil, chopped garlic, diced onion, garlic salt, Tony Chachere’s seasoning, pepper, and lemon pepper. Stir well to coat the potatoes.
  2. Roast Potatoes:
    • Spread the seasoned potatoes on a cookie sheet and roast in a preheated 400°F (200°C) oven for 15 minutes.
  3. Prepare Veggies:
    • While the potatoes are cooking, clean and trim fresh green beans. Place them in a bowl along with cleaned and cut carrots. Add 1 tablespoon of olive oil and 1 teaspoon of each seasoning used for potatoes. Mix to coat the veggies.
  4. Combine Veggies and Sausage:
    • After the initial 15 minutes of roasting, pull out the potatoes, turn them over with a spatula, and add the seasoned green beans, carrots, and sliced smoked sausage to the sheet.
  5. Continue Roasting:
    • Roast the combined ingredients for another 15 minutes or until the potatoes are fork-tender.
  6. Optional Spicy Kick:
    • Once cooked, you can add Gochujang (Korean hot sauce) for an optional spicy twist. Adjust the amount to suit your spice preference.
  7. Serve and Enjoy:
    • Dish out this delightful combination onto plates and savor the goodness of well-roasted vegetables, perfectly seasoned potatoes, and flavorful smoked sausage.
