Sloppy joe baked potatoes!
Ingredients:
Russet potatoes (1 per serving)
Butter, unsalted
Shredded Colby cheese
Sloppy Joe meat (using canned Sloppy Joe or Manwich sauce)
Salt and pepper, to taste
Optional toppings: sliced green onions, sour cream, chopped fresh parsley
Instructions:
1. Prepare the Baked Potatoes:
Preheat your oven to 400°F (200°C).
Scrub the potatoes thoroughly under running water to remove any dirt.
Pat the potatoes dry with a paper towel.
Prick the potatoes several times with a fork or knife to allow steam to escape during baking.
Rub each potato with a little bit of olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack or on a baking sheet lined with foil.
Bake the potatoes for 45-60 minutes, or until they are tender when pierced with a fork.
2. Prepare the Sloppy Joe Meat:
While the potatoes are baking, prepare the Sloppy Joe meat according to the instructions on the canned sauce. Typically, this involves browning ground beef in a skillet, draining excess fat, and then adding the sauce to simmer until heated through.
3. Assemble the Sloppy Joe Baked Potatoes:
Once the potatoes are baked, remove them from the oven.
Carefully make a slit lengthwise in the center of each potato, fluffing up the insides with a fork.
Add a pat of butter into each potato and season with salt and pepper to taste.
4. Add Sloppy Joe Meat:
Spoon a generous portion of the prepared Sloppy Joe meat over each potato, allowing it to seep into the fluffy interior.
5. Add Colby Cheese:
Sprinkle a generous amount of shredded Colby cheese over the hot Sloppy Joe meat. The heat from the meat and potatoes will melt the cheese beautifully.
6. Optional Toppings:
If desired, garnish the Sloppy Joe Baked Potatoes with sliced green onions, a dollop of sour cream, and a sprinkle of chopped fresh parsley.
