Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips, crushed
  • Optional toppings: sour cream, avocado, cilantro

Instructions:

  • 1. Preheat oven to 350°F.
  • 2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • 3. Add taco seasoning, black beans, corn, diced tomatoes, and salsa to the skillet. Cook for 5 minutes, stirring occasionally.
  • 4. In a separate bowl, mix together crushed tortilla chips and 1 cup of shredded cheddar cheese.
  • 5. Spread half of the tortilla chip and cheese mixture in the bottom of a baking dish. Top with beef mixture, then the remaining tortilla chip and cheese mixture.
  • 6. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  • 7. Bake for 20 minutes or until cheese is melted and bubbly.
  • 8. Serve with your favorite taco toppings and enjoy!
