Tried the copycat taco bell Mexican pizzas but threw it into a casserole dish instead of making single pizzas. We all liked it and yes it did taste like Taco Bell
1.5 lb ground beef
1 taco bell seasoning packet
1 large can refried beans
1 large can red enchilada sauce
10 corn flour mix tortillas (fry individually)
1 large tomato diced
1/4 medium onion diced
3+ cups shredded cheese
Chopped green onion
Brown meat. Drain. Put back in with seasoning pack as per directions.(1/2 to 3/4 cup water, simmer til most liquid absorbed), set aside. Heat beans in pot or microwave. Use a little vegetable oil to fry each tortilla. Layer bottom of casserole dish with fried tortillas. Layer beans across. Layer seasoned meat across. Pour 1/2 the can of enchilada sauce across evenly. Add another layer of tortillas.Evenly pour the other 1/2 can of enchilada sauce across. Sprinkle diced tomatoes and yellow onion across top. Spread cheese across top. (Tomatoes and onions can be on top or bottom of that layer of cheese). Bake until cheese melted and sides start bubbling. About 20 minutes at 350. Garnish with green onion after cooking. Let stand 10 minutes then serve.
