Sticky Toffee Pudding with Warm Vanilla Sauce

Ingredients:
- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
Warm Vanilla Sauce:
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup unsalted butter
- 1 tsp vanilla extract
Instructions:
- 1. Preheat the oven to 350°F and grease a baking dish.
- 2. In a bowl, pour the boiling water over the chopped dates and stir in the baking soda. Let it sit for 10 minutes.
- 3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- 4. Add the date mixture to the butter mixture and mix well. Gradually fold in the flour and baking powder until well combined.
- 5. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- 6. While the pudding bakes, make the warm vanilla sauce. In a saucepan, combine the heavy cream, sugar, and butter over low heat, stirring until the sugar is dissolved. Remove from heat and stir in the vanilla extract.
- 7. Serve the warm sticky toffee pudding with the vanilla sauce drizzled on top. Enjoy!
