  • 1 cup strong brewed coffee
  • 1 cup shredded coconut

  • 3/4 cup unsalted butter
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions:

  • Preheat the oven to 350°F and grease and flour three 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • Cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla.
  • Gradually add dry ingredients to wet, alternating with buttermilk and coffee. Mix until just combined.
  • Fold in shredded coconut and chopped pecans. Divide batter among cake pans.
