Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt

- 1 cup strong brewed coffee
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 can (12 oz) evaporated milk
- 1 cup granulated sugar
- 3/4 cup unsalted butter
- 4 large egg yolks
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F and grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla.
- Gradually add dry ingredients to wet, alternating with buttermilk and coffee. Mix until just combined.
- Fold in shredded coconut and chopped pecans. Divide batter among cake pans.
- Bake for 25-30 minutes, until a toothpick inserted comes out clean. Cool in pans before transferring to rack.
- In a saucepan, combine evaporated milk, sugar, butter, egg yolks, and vanilla. Cook until thickened. Remove from heat and stir in coconut and pecans. Cool before frosting the cake.
