Mexican Taco Lasagna

Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can refried beans
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 10-12 small corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- Optional toppings: diced avocado, sour cream, sliced jalapenos
Instructions:
- Preheat your oven to 375°F (190°C). In a skillet, cook the ground beef until browned. Drain excess fat and stir in taco seasoning.
- In a separate bowl, mix refried beans, diced tomatoes, black beans, and corn.
- Layer half of the tortillas on the bottom of a 9×13 inch baking dish. Spread half of the beef mixture on top, followed by half of the bean mixture. Sprinkle with cheese.
- Repeat the layers with the remaining tortillas, beef mixture, bean mixture, and cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for a few minutes before serving. Top with your favorite garnishes and enjoy!
