Hidden Veggie Mac and Cheese

Ingredients:
- 1 cup butternut squash, peeled and cubed
- 1 cup cauliflower florets
- 1 cup carrots, peeled and chopped
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions:
- 1. In a large pot, boil butternut squash, cauliflower, and carrots until tender. Drain and set aside.
- 2. Cook macaroni according to package instructions. Drain and set aside.
- 3. In a saucepan, melt butter over medium heat. Whisk in flour until smooth.
- 4. Gradually whisk in milk until the mixture thickens.
- 5. Add 1 ½ cups of cheddar cheese, melted veggies, macaroni, salt, and pepper. Stir until cheese is melted and mixture is well combined.
- 6. Transfer the mixture to a baking dish and sprinkle remaining cheese on top.
- 7. Bake at 350°F for 25-30 minutes or until cheese is bubbly and golden brown.
