Ingredients:

  • 2 cups of cooked rice
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 cup of mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 1 tablespoon of vegetable oil
  • 1/2 cup of diced cooked protein (chicken, shrimp, or tofu)
  • 1/4 cup of diced green onions
  • Salt and pepper to taste

Instructions:

  1. In a large pan or wok, heat the vegetable oil over medium heat.
  2. Add in the diced protein and cook until heated through.
  3. Push the protein to one side of the pan and crack the eggs into the other side.
  4. Scramble the eggs until fully cooked, then mix with the protein.
  5. Add in the mixed vegetables and cook until heated through.
  6. Stir in the cooked rice, soy sauce, and sesame oil.
  7. Cook, stirring occasionally, until the rice is heated through.
  8. Season with salt and pepper to taste.
  9. Stir in the diced green onions before serving.
