Ingredients:

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 2 1/4 teaspoons active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Pretzel salt
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions:

  • In a stand mixer, combine the warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for about 5 minutes, until it begins to foam.
  • Add the flour and melted butter. Using the dough hook attachment, mix on low speed until well combined.
  • Increase the speed to medium and knead until the dough is smooth and pulls away from the side of the bowl, about 4-5 minutes.
  • Remove the dough from the bowl and place it in a clean, oiled bowl. Cover with a clean towel and let it sit in a warm place for about an hour, until it doubles in size.
  • Preheat the oven to 450°F and line baking sheets with parchment paper.
  • Bring the 10 cups of water and baking soda to a rolling boil in a large pot.
  • Divide the dough into 8 equal pieces. Roll each piece into a long rope and form into a pretzel shape.
  • Boil each pretzel in the water mixture for 30 seconds, then remove and place on the prepared baking sheets.
  • Brush each pretzel with the egg wash and sprinkle with pretzel salt.
  • Bake for 12-14 minutes, until golden brown.
  • In a saucepan, melt 2 tablespoons of butter. Whisk in the flour and cook for 2 minutes.
  • Slowly whisk in the milk and continue to cook until the sauce thickens.
  • Remove from heat and stir in the shredded cheddar cheese until melted.
  • Dip the warm pretzels into the cheese dip and enjoy!
