Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 4 tablespoons butter
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups cooked rice

Instructions:

  • In a shallow dish, mix together the flour, salt, pepper, garlic powder, and paprika.
  • Dredge the chicken breasts in the flour mixture, shaking off any excess.
  • In a large skillet, melt the butter over medium heat.
  • Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the onion and bell pepper and cook until softened, about 5 minutes.
  • Stir in the chicken broth and milk, bring to a simmer.
  • Return the chicken to the skillet and simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
