Teriyaki Chicken Casserole
Ingredients:
1 lb boneless, skinless chicken breasts, diced
2 cups cooked white rice
1 cup broccoli florets
1 red bell pepper, diced
1 cup teriyaki sauce
1 tbsp olive oil
Salt and pepper, to taste
Sesame seeds, for garnish
Green onions, chopped, for garnish
Directions:
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until no longer pink.
In a large bowl, combine cooked rice, chicken, broccoli, red bell pepper, and teriyaki sauce.
Transfer mixture to a greased casserole dish and spread evenly.
Cover with foil and bake for 20 minutes.
Remove foil, sprinkle sesame seeds and green onions on top, and bake for another 10 minutes until slightly crispy.
