Sweet Potato Casserole

Who doesn’t love a comforting and delicious sweet potato casserole? This dish is a perfect addition to any holiday table or weeknight meal. Made with simple ingredients and bursting with flavor, this sweet potato casserole will quickly become a family favorite.

Ingredients:
– 4 large sweet potatoes, peeled and cubed
– 1/2 cup brown sugar
– 1/4 cup unsalted butter, melted
– 1/2 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/4 teaspoon salt
– 1/2 cup milk
– 2 eggs, beaten
– 1 teaspoon vanilla extract
– 1 cup mini marshmallows

Instructions:
1. Preheat your oven to 350°F and grease a 9×13 inch baking dish.
2. In a large pot, boil the sweet potatoes until tender. Drain and mash the sweet potatoes in a large bowl.
3. Add the brown sugar, melted butter, cinnamon, nutmeg, salt, milk, eggs, and vanilla extract to the mashed sweet potatoes. Mix until well combined.
4. Transfer the sweet potato mixture to the prepared baking dish and top with mini marshmallows.
5. Bake in the preheated oven for 25-30 minutes or until the marshmallows are golden brown.
6. Serve warm and enjoy!
